Courage to me is doing something daring, no matter how afraid, insecure, intimidated, alone, unworthy, incapable, ridiculed or whatever other paralyzing emotion you might feel. Courage is taking action.....no matter what. So you're afraid? Be afraid. Be scared silly to the point you're trembling and nauseous, but do it anyway!

Sweet, sour, savory, spicy, soups, noodles, grilled, fried...no matter the person you're making it for, it's easy to make it into something anyone can enjoy, so you can express your feelings towards anyone with it. It can connect the hearts of any number of people through how adaptable it is as an ingredient.
And that...is the true spirit of cooking, Lady Satsuki. So long as you remember that, it doesn't matter what you make for me. I'll be guaranteed to enjoy it.
